Tomato Soup

We've been inundated with tomatoes so we are eating a lot of pasta, tomato salads and tomato soup.

Tomato Soup

butter
250g bacon - chopped
1 large onion - chopped
2 clove crushed garlic
1 kilo chopped tomatoes
2 tbsp tomato past
1 bay leaf
750 mL stock
fresh basil

Heat the butter and gently fry the bacon, onions and garlic. Add the tomatoes, paste and bay leaf and simmer for about 5 minutes. Add the stock and bring to the boil. Cover and simmer for about 20 minutes. Remove the bay leaf and blend. Serve sprinkled with basil.
